Here you will find some ideas or inspiration for uses of my jam. As we say, "Jam, it's not just for toast".

My wife likes recipes that are easy, quick, and don't have many ingredients. Life is busy and we would rather spend time with our girls then in the kitchen.

Pumpkin Butter Parfait

A quick and easy dessert with many variations possible.

  • Crushed Ginger Snaps (graham crackers would be good too)
  • Pumpkin Butter (Big Bad Dad's of course. Mix with cream cheese and a little powdered sugar)
  • Whipped Cream (fresh made would better)


Cranberry Walnut Jam and Crescent Rolls

Quick, easy, different! Works with any of my flavors of Jam. Mrs. BBD made these for Thanksgiving last year. They were great.

On unrolled crescent rolls smear some jam, roll them back up. Follow baking directions on tube. We rolled up leftover turkey and jam also.


Pumpkin Butter Sandwichs

Ginger Snap Pumpkin Butter Cookie Sandwiches

Simple fall dessert.

  • Ginger Snap Cookies
  • Pumpkin Butter - use to suit your taste
  • Cream Cheese - amount depends on how many sandwiches you want to make
  • Powdered Sugar - not much is needed

Mix cream cheese, powdered sugar, and pumpkin butter together. Will be similar to making an icing. Once taste suits you spread on ginger snap and top with another ginger snap.

Stuffed French Toast Casserole made yummy with Big Bad Dad's Homemade Jams & Jellies! Warmed up some Purple Haze Jam and poured it over the top. Took this good dish and made it FANTASTIC!

Pass on the butter and slather on some jam! The peach adds to the sweetness of the corn and the spicy smoky flavor of the chipotle brings a new dimension to a summertime favorite.

Homemade Pop Tarts using Big Bad Dad's Homemade Jams and Jellies, Purple Haze Jam

Homemade Pop Tarts

The girls discovered Pop Tarts during a visit to their Grandma's house this summer. I decided to try a healthy (hopefully) and less expensive alternative to the store bought treats. You can also freeze them and reheat tasty treats on demand. I found the recipe on this website, freezable-recipe-homemade-p op-tarts/

BBD Pop Tarts Using a pizza cutter trim the edges so that you have a square/rectangle to work with. Using the pizza cutter divide each rectangle into 4 squares.
Purple Haze Pop Tarts Place and spread 1-2 Tablespoons of your favorite Big Bad Dad's Homemade Jams & Jellies on each square in the middle. MIDDLE is very important. I spread the jelly and a lot leaked out edges.

I used Purple Haze but think Banana Nut Bread or Pumpkin Butter would be great too.
Seal edges with fork Fold over the dough and seal edges with a fork. (With extra cut off dough, roll out and make 2 additional squares).
Bake at 450 Place on cookie sheet for baking. Bake at 450 degrees for 10-12 minutes.
Let cool After baking remove for cooling and prepare glaze by mixing in milk with powdered sugar until desired consistency. Spread on top of pop tarts and allow to cool.

Peanut Butter & Jelly Mini-Muffins

These are ROCKIN'! I made them for a school function and they were a big hit. I used a donut recipe because I love how moist the muffins are after baking.

Preheat oven to 400 degrees.

1/3 cup peanut butter
1/4 cup brown sugar
2 tablespoons butter or 2 tablespoons margarine
1/2 cup sugar
3/4 cup flour
1/2 cup milk
1 1/2 teaspoons baking powder
1 egg
1/4 teaspoon salt
1/2 teaspoon vanilla

Peanut Butter & Jelly Mini Muffin Batter

Cream butter and peanut butter together. Sift in flour, sugar, baking powder and salt that has been mixed together. Add milk gradually. Beat at a low speed for 2 minutes. Add the egg and vanilla, beat for 1 more minute. (I used a food processor and there was no issue.)

Fill your mini-muffin cups half way with the batter. Put a dollop of Big Bad Dad's Jam (I used Triple Berry) and top with more batter.

Peanut Butter and Triple berry Jam Muffins

Bake at 400 for 10-13 minutes.

Yield is 48 mini-muffins.

On the advice of a good friend and fabulous cook I made Peanut Butter Butter Cream Icing to top the muffins. Nothing is better than homemade icing. It is quick and easy too.


Peanut Butter Butter Cream Icing

8 tablespoons unsalted butter, softened
1/2 cup smooth peanut butter, don't use old-fashioned or natural brand
3/4 cup confectioners' sugar
1 pinch table salt
1/2 teaspoon vanilla extract
1 tablespoon heavy cream*

In standing mixer fitted with whisk attachment, beat butter and peanut butter at medium-high speed until smooth, about 20 seconds. Add confectioners' sugar and salt; beat at medium-low speed until most of the sugar is moistened, about 45 seconds. Scrape down bowl and beat at medium speed until mixture is fully combined, about 15 seconds; scrape bowl, add vanilla and heavy cream, and beat at medium speed until incorporated, about 10 seconds, then increase speed to medium-high and beat until light and fluffy, about 4 minutes, scraping down bowl once or twice.
Peanut Butter and Jelly Muffin Icing

I wish I had a raspberry or strawberry finish the muffin but I ate all the strawberries for a snack.

*I used whole milk and it still tasted great.

**I am the worst at following directions. I used the food processor and mixed the peanut butter and butter then added the 10X sugar, salt and vanilla, mixed and then added a bit of milk. Be careful adding the milk if you add too much you will have soup. Then you have to add lots of 10X and peanut butter to make it icing again.
